day off :)

Shopping in Ottawa today, once again we went to the T&T store :), I just love it there, I was looking for Nigari a coagulant for Soy milk to make tofu, they did not have it, but they did have  Gypsum Powder.

and they also had Durian :) after many years of debating ... should I try it or should I not!!!
I will try it, and I will also try to film or take pictures of it when we do *LOL*

DURIAN!!

we also went to visit my husband's cousin and his family, they where in the barn milking, the mom was milking the cows and one of the son's was milking the goats,
here a few pictures of the goats.

nothing much else today.
tomorrow morning it's cream making, this time for sure!

I'm in a very bad mood!!!

yesterday my PC messed up, so I spend the whole night until 4am trying to fix it, had to reformat and since recovery was not working :( lost many pictures, notes, pecepies and more.. this morning it messed up again..
I think I have it partly working, still got error messages. but I will try to fix these later.

major disaster, my nice huge BabySwiss cheese busted this morning :( and I asked for help on the boards, but sadly did not get any,

it smells so good!! but it has to mature and age another 5-6 weeks!!!

I knew I was supposed to vac pack it if it would bust, but my cheese is to big for my biggest bag :(
I just cut it in 4 pieces and vaccuum pack each piece.

now is it still supposed to be at warmer temperatures????? I HAVE NO CLUE!!!
so I put it back in to the cave. it has to ripen a lot longer still!!
hope to get some help tomorrow.

I also opened up one of my first big cheese I made this cheese season *LOL* looks good

cut it up and vaccuum seald it to, I have to go to a campfire tonight, so I bring sausages and cheese, and for me a bottle of Baby Duck... I think I deserve it..

AND I'M NOT GONNA SHARE IT!!!! *LOL*
it's all MINE!!! ;P

tomorrow is our day off, so just feeding my critters and off we go to Ottawa, daughter needs shorts and I need " NIGARI" tofu coulogulant... anyways here a few pictures.

had a nightmare last night *LOL*

OMG did I ever had a nightmare last night! *** giggle*** the dream I had was that my Baby Swiss cheese explodet, and I was paniking because the cheese is so big and my vaccuum sealer bags are to small for that size, in my dream I was sealing bags together to make a big bag, and after i was done I vaccuumed the cheese, and the stupid bag was not air tight *LOL* hahaha it's funny now, but not when I woke up this morning *LOL* I had a splitting headache. and the first thing I did was rushing to the other house to see what my cheese was doing *LOL*
I guess I'm paranoid.. I went in my PJ's to look at my cheese *LOL*

looked good not busted just swelled up, it's a good thing, took a picture a little later.

look how nicely it's swelling *LOL*

anyways not much interesting things today, drove twice to hawks, had to help my mother-in-law shop foir a washing machine. then pick up my daughter from Driver's ED.

OH my Spaetzle Hex came today :)
hopefully I will make spaetzle on saturday.

Tomorrow morning I will do another batch of cheese :) wohoo first pasture milk cheese :) and then tomorrow night I will make cream
yehhh I will make some cream cheese soon *LOL* and give Quark another try, and I get to use my new DollarStore draining bag *LOL*

I'm so tired today

HabaHaba what a day!!! I did it *LOL* but my back is killing me.. but I did it, made 27 kilo of sausages *LOL*
I was working on it about 8 hr. I had to grind up the pork, the beef was alredy.

I used one main recipe that I use all the time,
this one the only thing I change is I don't add the red Wine, my family does not like the wine taste in the sausage. I added some water. And I only used 50% Beef and 50% Pork
I made 3 batches, one with recipe above and one batch I added these spices

  1. salt

  2. pepper

  3. "caribien"-ginger,garlic,piment

  4. parsley

  5. Nifa spices (bought it at the asian market)

  6. Cellery seed

  7. majoran

  8. onion powder

  9. water

The 3th batch I added these spices

  1. kosher salt

  2. peper

  3. parley

  4. cellery seed

  5. thymian

  6. onion salt

  7. majoran

  8. mace

  9. peperoncino

  10. ginger

  11. water
notice how much space I have in my cheese cave *LOL* this morning I removed one big shelf so we could add a table in there to make sausages :)
we had to since the ouside temperatures where way above 30 degree celcius. it was crazy hot!!
and in the cheese cave we had a constand 11 degree celcius, OMG we where freezing in there *LOL* had to put a warm sweather on.. but each time we went out for a small break, it was like OMG!!!! can't say that wort online *LOL*.....

all donne :) I at 8pm I was donne with everything, they are all packed and they are in the freezer!
BBQ yumm yumm :)

tonight I cooked some leftover  I had in the stuffer, I made patties, and we ate some of all the 3 batches, they are all good, each one has his own taste :)
so I say
SUCCSESS!!!!!

Oh yes this morning I moved the 2 big Baby Swiss cheese in to the greenhouse for some more humidity
one was swelling pretty nice :)

tonight I'm so tired, my back is killing me, that sure was a long day, I'm glad it's over, but also glad my freezer has sausages :)

Sausage Day tomorrow

I think I will make sausages tomorrow, I took 13kg pork meat & 16kg beef meat out of the freezer tonight, it's tawing slowly in the fridge, if it's all twed by tomorrow afternoon  I will go ahead and make some?? not sure what yet, have a few recipe ready and the spices are all on hand :) I'm ready as soon as the meat is :)

I needed to make room for the new beef we will get for the freezer, so it's sausage time for the rest I have.

The turkey has to wait another few days, I can't handle more meat in one day, my hubby will help this time, and we will use the bigger stuffer.

in the morning I have to take cxare of my cheese cave first, cheese needs to be washed and turned.

the Baby Swiss are looking good, took a few pictures today :)

I'm looking for a mincer?? not sure if it is called that way, it's not to make ground meat, it's more mincing the meat in to small pieces, here is a picture that looks simular to what I'm looking for

I took the above picture from here it is not my picture, but needed to show the size of the meat once it comes out of the machine I need.

In the Sausage Maker catalogue I sah the " Meat Cuber" is that what I'm looking for?
or is it more the slicer?

not sure if one of the above would work?? what if I cut the meat in to cubes and then let them go trough the slicer?? would that make the meat in to these small minced -- chopped -- geschnetzeltes??

I had this gadget to use from my friend, but he does not like it to much when he has to lend his appliances
I'm also looking for information on this gadget.

the one above with the picture that I was borrowing from my friend , works like this, you cut the meat in to cubes and put them in there and the cubes get slices , very simple.

does anyone has this gadet and can tell me about it please. I really need to find a gadget that does what I need. please help

Yesterday I ordered the Spatzle Hex :) can't wait to have it I will let you know how it works once it gets here and I try it out,

I have had many gadgets to make spaetzle, but the others each requires my wrists to work, and they just hurt to much. I have the nana's spaetzle maker, this one

here is a youtube video of it running dry *LOL*

the new one will be much easier. can't wait to try it :)

Plus in the next few days I will get the Soyquick soy milk maker,
also makes nut milks and ??? not sure yet, but I think tofu is something I can do to in there, I will know more once it gets here, plus in fall I just have to cross the road and grab some of my neighbours Soya *LOL*

another Monday post *LOL*

this is the 2nd post today, wekll as I said this morning I will make some sausages soon,
the plan was not for today, but the family wanted another campfire tonight and I had no more sausages, so I made some Mexican Chorizo sausgaes very fast today, I just used my small moulinex grinder with a stuffing cone attachment, I don't like working with this small machine, but for just 6 pounds of meat it was OK..
I was not able to take pictures during the making, my hands where always full of meat *LOL*
so I just took some random pictures.

Just after finish stuffing the Mexican Chorizo's

Our Campfire place, we have this one since many years, we remove it during the winter and put it back up as soon as the weather turnes warm :)
we used 6 Silo stones :) and 12 bricks.

sausages ready to be cooked :)

still cooking :)

ready to eat :)

I would say not bad for the first sausages of the season that I made :)

Not doing Cheese in the next few days

I won't be making cheese in the next few days!! we let the cattle in to pasture and the change made them drop in milk, this is normal and they soon gonna pick up again, so this gives me a break...

well it does not really, I will be making sausages in the next few days, just waiting for some beef to mix with the pork I have.
and I will also try making Turkey sausages, I have a humangoes turkey in the freezer that is just to big to cook anywhere *LOL* so sausages he will turn in to ;P

and since you came here and thought to read something about cheesemaking, sorry... *LOL*

cows went to pasture

today finnaly after a long winter inside the cows are back out to pasture, we where ready a few days ago, but we prefer to let them out the first time when it's not a hot day, the udders get sunburn so fast and if they get one, they are in pain, and when we have to milk them, they jump from pain, so a cloudy day is perfect for it, so today 22 May 2010 out they go,
I made a few videos , but some are not aprop. to post here since my daughter is using bad language *LOL*

My daughter *LOL* not sure what she is doing , but she is wearing her cadet touque and it looks like she is giving commands *LOL*

I also made a strawberry cheesecake with the creamcheese I had left over, I wanted to wip some cream, but I soon found out it was a tiny bit sour :( so I just made butter out of it, and the rest will be yummy for sauce :)

anyways no gelatin or vanilla pudding left in the house !! so I had a yummy but a little on the soft side cheesecake *LOL* no recipe I just improviced.

And I had a craving for Berliner today, so I tried to make some, followd the recipe from chefskoch.de
the side is down right now, otherwise I would post a link.

I messed up a little in the size, mine where to small, but they taste almost like the real thing I remember from Europe, they should be between 3" and 4" in diameter and about 1and a half inch high, .... mine where tiny,  next time they will be bigger, but the taste is what counts right :)

the jam is not in there yet, these are filled with jam.

we had a sweet supper tonight, cheesecake and Berliner *LOL* not to Healthy right ;P

Friday

Hi :)
this morning was another cheese day, once again I made Bergkaese, I will wait for the Emmental a little longer, the cows will go to pasture in the next few days, and then the milk will eaven be better when they are on grass :)

Yesterday I was in town and I went to the Dollar Store, needed a few things and I found something that really could help when making Quark or cream cheese, I don't have a draining bag yet, and I have been using my cheesecloth, but a bag would be much better,
when I make Quark... well let's say when I TRY!!! to make Quark I use skim milk and 14 liters in one shot, so my cloth it's a little to small.
so hopefully this Laundry Bag 22"x30" 56cm x 76cm will work :)
and the best part it was only $1.00 :)

I finnaly finished to put the greenhouse together, and moved some of my Baby Swiss cheese in it...
hahaha the BIG once won't fit!! I need to make a few more shelfs to acomodate them...
but hey once it's all set up it will protect them from the dust once we start to work in the house. since they have to stay there a few weeks.

I tried to film the moon tonight, it's pretty hard to do since the moon moves, and each milimeter I moved the camera I lost the moon *LOL* but it's pretty need to see it close up :)

BTW the camera is a small Panasonic SDR-S26 SD
I got it from amazon for FREE thanks to Swagbucks :)

my Baby Swiss is slowly starting to swell :)

Today I noticed that the Baby Swiss cheese is slowly starting to swell, you see it better in real life then on the picture :)

and I started to assemble the small greenhouse I will use for my cheese,
I will keep it in the house, but since we still work on this house (building) I want to protect the cheese from dust, and try to keep the temperature the same.

Hope it will work out :)

I will put in a few more shelfes and support, it's not the strongest build, but hopefully it will do it's job, otherwise it will go in the garden next year *LOL*
after a long day working and driving daughter around we had some yummy
" Poutine all dressed "

Tuesday, May 18, 2010

wow it's been 8 days since I made cheese...

But this morning I did another batch "Bergkaese" again, we just love that one, it's fast to make and you can eat it in 14 days :)

I sah today that 2 of the small Baby Swiss cheese are starting to swell :) that's a good sign :)
will try to make a picture tomorrow.

I browsing amazon again :) I just got some $ again from Swagbucks :) now I'm @ $510.00 that I got FREE from Swagbucks.

Monday, hmm nothing much

I thought I was supposed to do cheese this morning... well NOPE did not. it will be tomorrow morning *LOL*
what did I do was make butter, Ghee, Quark and creamcheese, plus tonight I made a "kaesekuchen" I just ate some :)

the recipe is from here
sorry it's in german,

but there is a English one that is close to the one above..
gives you an idea and it's here

homemade by me, with homemade butter, homemade cream, homemade quark and homemade cream cheese, and eggs from my chickens :)

It was yummy, but somehow the Quark I made was not as thick as it should have been I think,
during baking I got to layers, one more liquid and one firm!!  go figure.. the thinner part tasted like vanilla pudding, so it was yummy to :)

not sure if I gonna make quark again from skim milk, so much work and ???
I have to ask my friend, how she does hers... then I will try again??? maeby *LOL*

The Ghee, is OK but it was a little harder to do then last time, I think it could be because the butter was just made??
so I did not take pictures this time, but will do when I make my next batch...

Saturday

Today I sold 7 lambs, now there are 11 sheep and 3or 4 lambs to sell. anyone needs some sheep? *LOL*

This afternoon I made some

-Ghee
-Butterschmalz
-Clarified butter

I was looking online on how to make it , but all the youtube videos or recipes where to complicated, I just did not have time to stand in front of the stove and wait till it's done,

I found an easy way on a German site
here  (sorry it's in German)
and it worked like a charm, the oven way is awesome.

I used 7 of these cups of Butter

that's the leftover

all clear :)

starting to get thicker

all donne

next batch I try to take more pictures of the whole process :)

tonight I made cream again, this time about 30 liters, I kept 12 liters of skim milk to try my luck with Quark again *LOL*
also I'm making creamcheese gain from 2 liters of cream and 2 liters of whole milk. last batch turned out very yummy :)
and there are 2 pails of cream each about 14 liters, one batch will be cultered butter and the other one sweet, my sister-in-law wants to make "Kräuterbutter" (herb butter)

I will try to make Ghee again with half the batch of the cultured butter.

tomorrow I have to work, so cheese day will be again Monday morning.
