made Ghee today

In the morning I made cheese, I know I know another bergkaese *LOL* but we like it and it's fast to make,
had to vaccuum seal some cheese that are ready :) drove daughter to dance, but had to pick her up earlier bacuse it was "BORING" hahaha how can a dance be boring??

anyways finished the Ghee almost, tomorrow I will fill it in little glass containers.
I'm just to tired to do anything right now,

cheese morning *LOL*

Finnaly I made another cheese this morning, I made a new brine the day before my batch #14 and that Brine was a disaster, the PH was not balanced and I had problems with my babyswiss getting a firm rind...
anyways it seems OK now, so I made Bergkaese :) but I did bring home some whey just in case the Brine acts up on me.

yesterday I went to cadets with my daughter, she made it :)  she got PE&RT (Physical Education and Recreation Training)  in CSTC Blackdown, she is leaving July 3th and will be back August 14th, will miss her but will go and visit if everything goes as planned :)

also today I should receive my daughter's new laptop, her's is on the verge to crash, she wants a Mac but I can't afford that just yet, I guess that will keep me busy a little wile till everything is installed from the old one to the new one.

OK Laptop arrived, I'm working on the recovery disks, downloading some stuff for it.
it's a HUGE Box, I would say more box then something else *LOL*

I'm almost done with the recovery discs and still downloading stuff.


I went to the house to get the BabySwiss to move back to the cave :)
they sure look good :)

and eaven the one that busted is not to bad looking *giggle*


I moved BabySwiss cheese from the warm place to the cave, now it has to be there a few weeks and then we know if it's good *LOL*

it's time for a post

I think it's time for a post, I have been so busy that I almost forgot to post,
on Friday night I made about 42 liters of cream, since I knew I could not make some on the weekend.

Saturday was the cadet annual and we had fun watching the cadets

after the annual we went for something to eat and my husband was acting silly *LOL* but this video is so funny, look when he realized I was filming, hahaha his expression changed *giggle*


on Sunday was not much going on, I had some problems with my cheese Brine, so I did not plan on making cheese Today, but we did churn butter from the cream I did on Friday night
this afternoon, then tonight my sister-in-law and me packed the butter and I also did another 28 liters of cream.
I was driained when I got home,
I usualy bring home skim milk for the chickens, I dump 3 pail of skim milk in to a big drum and add rennet, leave it for a few days and then give the cheese to the chickens.
but tonight I took a 200 liter drum and brought it to the main farm where I do the cheese or cream, anyways I put in aprx 200 liters of skim milk and added rennet, in a few days I will get it for the birds :)
so I did not waste anything :) usualy I dump 100 plus liters in to the gutter, but not today. :)

I'm not sure what UI will do tomorrow morning, I would like to sleep *LOL* but I should do cheese...

I will try something with the cream tomorrow afternoon, will post results later.

Busy Day it was/is *LOL*

The day started with cheesemaking, another batch of BabySwiss :) really hope that all these batches turn out good, this is #3 of BabySwiss cheese, again I used AromaB culture, the one that made big cheese in Babyswiss batch3 explode *LOL*

I did so many things today I have to remember, last night I bought some mushrooms champignion, they where in the reduced bin for 50% off, they did not look perfect, but for drying they where just right.


I used my NESCO Professional Food & Jerky Dehydrator, I love this small gadget :)
I have made jerky and also dryed many things with this and I give it thumbs up :)

Shopping in the US

I bought mine at Costco.ca but they don't have it anymore, they have the square one, I'm not familiar with that one, so I won't put a link.
the extra trays I bought at Home hardware they had to order them for me, but I love Home Hardware they sell so many things eaven coffee pods *LOL* I'm serious *LOL*

then my sister in law made some Ice cream for the family, we got Strawberry and Rum/raisins yuck I don't like raisins *LOL* but Hubby does I think *LOL*

I still have to do my chores ( feeding my sheep's, Llama's, goats and chickens and get the cheese out of the press and in to the Brine, and then I have to drive 30 min. to pick up daughter from cadets. oh supper has to be made to, OMG I'm so pooped today *LOL*

another day

Ha!! the Dollar store Laundry bags work perfectly as a draining bag :)
yesterday morning I made cream about 24 liters of it :)
4 liters went to sister-in-law she will make ice cream yumm yumm **drool**  2 liters went to other sister-in-law not sure what she will do :) 6 liters went to me for cream cheese making and 12 liters are for butter.

today I used the cheap Laundry bags I posted about them on a  Friday anyways they are working great.




the one in the back is Quark and the front one is cream cheese


tomorrow morning I will make some BabySwiss again, and use AromaB again, hopefully this one won't explode *LOL*
the other one that exploded on saturday is vaccuum-sealed and back in the warmer room for more heat *LOL*

had not much time to do more things today, salami has to wait a few days more, I have to drive my daughter around so much lately, today she had to go and get her kilt for cadets, tomorrow is cadets and again on Friday! But they have to practise for the big day on Saturday it's the Annual Ceremonial Review, another year has passed...

Oh I almost forgot, each time I make cream I bring home many buckets of skim milk, but I only have a few chickens and they can't drink all the milk, so I fill a huge bucket and ad some older rennet I have, and the next day I have a funny looking cheese *LOL* the chicken love it and I get to use all the mil without having it spoil :)

pretty soon the eggs will taste like cheese jk jk jk ( just kidding )

day off :)

Shopping in Ottawa today, once again we went to the T&T store :), I just love it there, I was looking for Nigari a coagulant for Soy milk to make tofu, they did not have it, but they did have  Gypsum Powder.

and they also had Durian :) after many years of debating ... should I try it or should I not!!!
I will try it, and I will also try to film or take pictures of it when we do *LOL*

we also went to visit my husband's cousin and his family, they where in the barn milking, the mom was milking the cows and one of the son's was milking the goats,

nothing much else today.

I'm in a very bad mood!!!

yesterday my PC messed up, so I spend the whole night until 4am trying to fix it, had to reformat and since recovery was not working :( lost many pictures, notes, pecepies and more.. this morning it messed up again..
I think I have it partly working, still got error messages. but I will try to fix these later.

major disaster, my nice huge BabySwiss cheese busted this morning :( and I asked for help on the boards, but sadly did not get any,

it smells so good!! but it has to mature and age another 5-6 weeks!!!


I knew I was supposed to vac pack it if it would bust, but my cheese is to big for my biggest bag :(
I just cut it in 4 pieces and vaccuum pack each piece.

now is it still supposed to be at warmer temperatures????? I HAVE NO CLUE!!!
so I put it back in to the cave. it has to ripen a lot longer still!!
hope to get some help tomorrow.

I also opened up one of my first big cheese I made this cheese season *LOL* looks good





 cut it up and vaccuum seald it to, I have to go to a campfire tonight, so I bring sausages and cheese, and for me a bottle of Baby Duck... I think I deserve it..



AND I'M NOT GONNA SHARE IT!!!! *LOL*
it's all MINE!!! ;P


tomorrow is our day off, so just feeding my critters and off we go to Ottawa, daughter needs shorts and I need " NIGARI" tofu coulogulant... anyways here a few pictures.

had a nightmare last night *LOL*

OMG did I ever had a nightmare last night! *** giggle*** the dream I had was that my Baby Swiss cheese explodet, and I was paniking because the cheese is so big and my vaccuum sealer bags are to small for that size, in my dream I was sealing bags together to make a big bag, and after i was done I vaccuumed the cheese, and the stupid bag was not air tight *LOL* hahaha it's funny now, but not when I woke up this morning *LOL* I had a splitting headache. and the first thing I did was rushing to the other house to see what my cheese was doing *LOL*
I guess I'm paranoid.. I went in my PJ's to look at my cheese *LOL*

looked good not busted just swelled up, it's a good thing, took a picture a little later.

anyways not much interesting things today, drove twice to hawks, had to help my mother-in-law shop foir a washing machine. then pick up my daughter from Driver's ED.

OH my Spaetzle Hex came today :)
hopefully I will make spaetzle on saturday.

Tomorrow morning I will do another batch of cheese :) wohoo first pasture milk cheese :) and then tomorrow night I will make cream
yehhh I will make some cream cheese soon *LOL* and give Quark another try, and I get to use my new DollarStore draining bag *LOL*

I'm so tired today

HabaHaba what a day!!! I did it *LOL* but my back is killing me.. but I did it, made 27 kilo of sausages *LOL*
I was working on it about 8 hr. I had to grind up the pork, the beef was alredy.




I used one main recipe that I use all the time,
this one the only thing I change is I don't add the red Wine, my family does not like the wine taste in the sausage. I added some water. And I only used 50% Beef and 50% Pork
I made 3 batches, one with recipe above and one batch I added these spices

  1. salt

  2. pepper

  3. "caribien"-ginger,garlic,piment

  4. parsley

  5. Nifa spices (bought it at the asian market)

  6. Cellery seed

  7. majoran

  8. onion powder

  9. water

The 3th batch I added these spices

  1. kosher salt

  2. peper

  3. parley

  4. cellery seed

  5. thymian

  6. onion salt

  7. majoran

  8. mace

  9. peperoncino

  10. ginger

  11. water
notice how much space I have in my cheese cave *LOL* this morning I removed one big shelf so we could add a table in there to make sausages :)
we had to since the ouside temperatures where way above 30 degree celcius. it was crazy hot!!
and in the cheese cave we had a constand 11 degree celcius, OMG we where freezing in there *LOL* had to put a warm sweather on.. but each time we went out for a small break, it was like OMG!!!! can't say that wort online *LOL*.....




all donne :) I at 8pm I was donne with everything, they are all packed and they are in the freezer!
BBQ yumm yumm :)

tonight I cooked some leftover  I had in the stuffer, I made patties, and we ate some of all the 3 batches, they are all good, each one has his own taste :)
so I say
SUCCSESS!!!!!

Oh yes this morning I moved the 2 big Baby Swiss cheese in to the greenhouse for some more humidity
one was swelling pretty nice :)


tonight I'm so tired, my back is killing me, that sure was a long day, I'm glad it's over, but also glad my freezer has sausages :)

Sausage Day tomorrow


I think I will make sausages tomorrow, I took 13kg pork meat & 16kg beef meat out of the freezer tonight, it's tawing slowly in the fridge, if it's all twed by tomorrow afternoon  I will go ahead and make some?? not sure what yet, have a few recipe ready and the spices are all on hand :) I'm ready as soon as the meat is :)

I needed to make room for the new beef we will get for the freezer, so it's sausage time for the rest I have.

The turkey has to wait another few days, I can't handle more meat in one day, my hubby will help this time, and we will use the bigger stuffer.

in the morning I have to take cxare of my cheese cave first, cheese needs to be washed and turned.

I'm looking for a mincer?? not sure if it is called that way, it's not to make ground meat, it's more mincing the meat in to small pieces, here is a picture that looks simular to what I'm looking for


I took the above picture from here it is not my picture, but needed to show the size of the meat once it comes out of the machine I need.


In the Sausage Maker catalogue I sah the " Meat Cuber" is that what I'm looking for?
or is it more the slicer?

not sure if one of the above would work?? what if I cut the meat in to cubes and then let them go trough the slicer?? would that make the meat in to these small minced -- chopped -- geschnetzeltes??

I had this gadget to use from my friend, but he does not like it to much when he has to lend his appliances
I'm also looking for information on this gadget.








the one above with the picture that I was borrowing from my friend , works like this, you cut the meat in to cubes and put them in there and the cubes get slices , very simple.

does anyone has this gadet and can tell me about it please. I really need to find a gadget that does what I need. please help


Yesterday I ordered the Spatzle Hex :) can't wait to have it I will let you know how it works once it gets here and I try it out,

I have had many gadgets to make spaetzle, but the others each requires my wrists to work, and they just hurt to much. I have the nana's spaetzle maker, this one

Plus in the next few days I will get the Soyquick soy milk maker,
also makes nut milks and ??? not sure yet, but I think tofu is something I can do to in there, I will know more once it gets here, plus in fall I just have to cross the road and grab some of my neighbours Soya *LOL*

another Monday post *LOL*

this is the 2nd post today, wekll as I said this morning I will make some sausages soon,
the plan was not for today, but the family wanted another campfire tonight and I had no more sausages, so I made some Mexican Chorizo sausgaes very fast today, I just used my small moulinex grinder with a stuffing cone attachment, I don't like working with this small machine, but for just 6 pounds of meat it was OK..
I was not able to take pictures during the making, my hands where always full of meat *LOL*
so I just took some random pictures.

Our Campfire place, we have this one since many years, we remove it during the winter and put it back up as soon as the weather turnes warm :)
we used 6 Silo stones :) and 12 bricks.
